Cote Mer - a place by the sea. But not just any place, and not just any sea. Rather, a place by the bay of Island Harbour, one of the most magical settings imaginable. Island Harbour, home of the fishermen, where contrasts meet in full harmony, the burning sun and the easy shade, the sand and the sea, beautiful in the day and charming by the moonlight.
A word about our concept, our background and, indeed, our menu: this time last year Stephan, your host today, and Thomas, your chef, were both mired in the cold of Moscow, Russia. Stephan had been there for seventeen years, building a CV that is too long for these lines. Suffice it to say that he is a gregarious fellow, a man of the people, generous, passionate and, above all, fun. Test him, and you'll see what I mean. Meanwhile, Thomas , award best young head chef of south france,worked, in Moscow for seven years. He was included in the Best Cuisine Guide of the city, was highlighted by the Louis Vuitton City Guide, appeared on the TV, collaborated in books, was part of exhibitions and all the rest. That's why he's the one behind closed doors, putting food in your plates. Moscow was good to them both, but at some point the French inside them rebelled against the inclement weather. Thus, the dream was born of emigrating to the Caribbean to perch themselves on a hot beach, where they could dry up their souls. These days such dream bears a very specific name: Cote Mer.
In Moscow, Thomas was famous, among other things, for the lush festivals he organised to promote French culture and cuisine, where he collaborated with Michelin-star guest chefs such as Xavier Mathieu, Roland Chanliaud and Guillaume Sourrieu. The intention is to create a similar, though simpler, scenario in Island Harbour, the new consulate of the Mediterranean in Anguilla where French and Italian inspirations blend with North African traditions, with Spanish recipes and with local produces to create a style that is light but tasty, fresh yet spicy, in an inviting atmosphere that appeals to more than just the appetite.
Cote Mer is our home, and in our home hospitality is the first rule. As such, we want Cote Mer to be your home, too. Come and join us for a beer in the sun or a drink in the afternoon. Sit by the ocean, lie in our hammocks, and discover the unique beauty of Island Harbour, a place like no other.
